Pumpkin Bars
4 eggs beaten, then add 2 cups sugar, 2 cups pumpkin, 1 cup oil. Beat this together then add 2 cups flour, 2 tsp cinnamon, 2 tsp baking soda, 2 tsp baking powder and 1/2 tsp salt. Mix this well and pour into greased jelly roll pan.
Bake @ 350* for 30-35 mins.
When cool, frost with:
8oz cream cheese, 1 stick oleo, 16 oz powdered sugar, 2 Tbs vanilla. Beat well.
I also dust with cinnamon after frosting. Looks very cool:)

Thanks Tuki!! I like that pic too...that's how we spent most of our time, so we didn't damage the color, so I had to take a pic. DH thought I was crazy!
So glad it was only a 1pg LO...took forever!!!!

You, too, Suzy??? Guess I'm just old. *sigh*
When I was a kid we never used margarine--only butter. But my friends' parents used margarine. In MN, absolutely everything is against the law, so one of the laws said you couldn't color margarine. It came in packages and was an ugly gray lump, so they included a dye packet that you would knead into the margarine so it would turn yellow...

I think it was illegal everywhere at that time! LOL My mom told me the same story...she's much older than you tho. much....
we are a "real" butter family too....
BTW, I throw potatoes in with my veggies in the steamer all the time. They come out pretty good that way too. takes a bit longer but surprisingly not much more than nuking.
