JoAnns sells 8x11 sheets of foam with a sticky backing & am wondering if anyone cuts this with the cricut? If so, do you use the deep cut blade? TIA

I have not tried it myself yet. There are vids on youtube that show how to cut fun foam with the cricut. Just do a search on youtube and you should come up with a few.

I haven't tried it myself with the Cricut but saw it done at CHA last January. It was the sticky back foam and large daisy type flower strip cut at these settings on an Expression: Speed 3 Pressure 5 Blade Depth 6 Multi-cut 4 That may be a good starting point for you.
I have done really well with the Cuttlebug dies on fun foam. HTH!
