I have a Personal, Mini, and now have an Expression... In comparison to my mini the pressure setting on the expression has to be set a lot higher and it concerns me a little. In order to cut textured cardstock the pressure has to be max, blade depth 6 and I still have to do a multi-cut to get a clean cut. Do you think this is normal or a fault of my new machine?

I have mine set pretty high for textured cardstock but a rarely need to use multi-cut. You could try a different blade. If that doesn't make any difference swap out the blade housings and see if the one from your personal or mini makes any difference. If not, I'd give PC a call.
