O.K. I know I'm being really stupid but.....how do you delete a saved project once you have finished with it? Can anyone save my sanity please?

Do you mean from CCR? If yes, then click the My Projects button on the top toolbar. Single click the name of the file you want to delete then click the little rubbish bin beside its name.
